Zucchini Hummus

A tasty spin on this Mediterranean classic. 
Course: Dip

Ingredients

  • 2 zucchini, chopped
  • ¾ cup tahini
  • ½ cup freshly squeezed lemon juice
  • ¼ cup olive oil
  • 2 cloves garlic
  • 2 ½ teaspoons sea salt, to taste
  • 2 tablespoons cumin

Instructions

  • In a food processor fitted with an S blade, blend all ingredients until smooth and creamy. Refrigerate in a glass container for up to one week.
