Who else is “Pumped Up For Pumpkin?” It’s mid-October and the pumpkin craze seems to be in full force. These easy-to-make Pumpkin Parfaits are filled with good-for-you pumpkin puree and Greek yogurt. They are perfect for breakfast and also make a healthy afternoon snack.

  • 1/4 cup Greek yogurt
  • 1/4 cup pumpkin puree 
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon cinnamon
  • 1 teaspoon honey
  • 1 teaspoon vanilla


  1. Mix pumpkin puree and next 6 ingredients together. Layer small cups with Greek yogurt and pumpkin puree mixture, alternating. Top with homemade granola.
