Are you looking for healthy ways to eat pumpkin this fall? This squash isn’t just delicious, it’s super-nutritious because it’s loaded with vitamin A, fiber, iron, potassium and other nutrients. We compiled a list of the best recipes we could find with an eye toward healthy pumpkin recipes that will satisfy your tastebuds without expanding your waistline.

But you don’t just have to use pumpkin in these recipes. Other types of squash will work, too. Butternut, buttercup, honeynut and acorn squashes are all suitable substitutes.
