Ingredients
- 3 large beets peeled and diced (about 4 cups)
- Olive Oil for baking beets
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 2 tablespoons olive oil
- 1 cup whole-milk kefir
- 3 tablespoons balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon fresh thyme leaves
Instructions
- Preheat oven to 400°. Place chopped beets onto a large sheet pan, drizzle with olive oil, and season with salt and pepper. Toss to coat, and bake 40–45 minutes, flipping once. Let cool 5–10 minutes.
- Place beets and remaining ingredients in a food processor, and blend until combined. Season with more salt and pepper, to taste.
