Ingredients
3large beetspeeled and diced (about 4 cups)
Olive Oilfor baking beets
1teaspoonkosher salt
1teaspoonground black pepper
2tablespoonsolive oil
1cupwhole-milk kefir
3tablespoonsbalsamic vinegar
1teaspoonhoney
1teaspoonfresh thyme leaves
Instructions
Preheat oven to 400°. Place chopped beets onto a large sheet pan, drizzle with olive oil, and season with salt and pepper. Toss to coat, and bake 40–45 minutes, flipping once. Let cool 5–10 minutes.
Place beets and remaining ingredients in a food processor, and blend until combined. Season with more salt and pepper, to taste.
