A food photographer, food stylist, recipe developer and cookbook author, Kelly Jaggers enjoys creating indulgent recipes using fresh, seasonal ingredients. She shares recipes on her blog, Evil Shenanigans. “I like to cook with fresh, local ingredients like grass-fed beef and free-range chicken. I love all things exotic, and I enjoy shopping for spices more than I like shopping for shoes. I can’t live without my butter, vanilla beans, chili peppers and chocolate,” she says. In her latest cookbook, The Ultimate Baking for One Cookbook (Adams, 2022), Kelly makes it easy to bake delicious, decadent treats in smaller batches with 175 recipe options. Baking For One:
1. Stock up on staples. Baked goods generally use a lot of the same ingredients.
2. Preparation is key. Be sure to check your recipe before you start to bake to make sure you have everything you need so you are not disappointed later. Get out all the bowls, pans and ingredients before you start baking, and let any ingredients come to room temperature as directed.
3. Keep an eye on it. Watch your small-batch and single-serving baked goods as they bake. Every oven is different, and you can go from perfectly baked to burnt in minutes.
