Ingredients
- 1 cup brown rice
- 3 cups water
- 1 quart soy milk
- 1 cup water
- 1½ teaspoons cinnamon
- 1 pinch nutmeg
- ¼ cup cocoa powder
- ½ cup coconut sugar
Instructions
- Let rice soak overnight, or at least 8 hours.
- Rinse rice, place in a sauce pot with 3 cups of water, and raise to a boil; bring to a simmer, and cook until tender and mushy, approximately 30–40 minutes.
- Chill rice in freezer for 30 minutes. Then place all ingredients in a blender, and blend until smooth. Adjust spices and sugar as needed.
