- 1 Container Icelandic Provisions Coconut Skyr
- 1 egg
- 1/2 ripe banana
- 1/2 cup rolled oats gluten free if desired
- 1/2 teaspoon baking powder
- 1/2 tablespoon peanut butter
- Place all ingredients in a blender and blend until smooth. If batter is too thin, add a tablespoon or two of oats and blend again
- Next lightly coat a large nonstick skillet with coconut oil and place over medium low heat. Drop batter by 1/4 cup onto skillet. Cook until bubbles appear on top.
- Flip cakes and cook until golden brown on underside.
