Brown Rice Chocolate Horchata

Replenishes carbohydrate stores; strong antioxidant; moderate strength builder.

Ingredients

  • 1 cup brown rice
  • 3 cups water
  • 1 quart soy milk
  • 1 cup water
  • teaspoons cinnamon
  • 1 pinch nutmeg
  • ¼ cup cocoa powder
  • ½ cup coconut sugar

Instructions

  • Let rice soak overnight, or at least 8 hours.
  • Rinse rice, place in a sauce pot with 3 cups of water, and raise to a boil; bring to a simmer, and cook until tender and mushy, approximately 30–40 minutes.
  • Chill rice in freezer for 30 minutes. Then place all ingredients in a blender, and blend until smooth. Adjust spices and sugar as needed.
