When she first started to follow a plant-based diet, Jillian Glenn would search for vegan recipes online. “The problem I ran into was that I had never heard of many of the ingredients, many were highly processed, and I wasn’t even sure where to buy them!” she says. She was also challenged to find ones that were low calorie and nutritious. So, she started coming up with her own recipes. The founder of Peanut Butter and Jilly, a popular food blog specializing in vegan and gluten-free recipes, Jillian has released a new book, Light & Easy Vegan Baking (Page Street, 2022). In it, she shares her secrets to recreating everyone’s favorite treats—like Brown Sugar Chocolate Chip Cookies and Rich Red Velvet Cake with Cream Cheese Frosting—vegan style. Jillian’s use of fuss-free ingredients and clever techniques, like combining traditional sugar with no-calorie sweeteners, will have people eager to bake their way through every chapter. Vegan Baking Tips:
1. Looking for a reduced-sugar option? Try using as little as ¾ cup (150g) of sugar in place of a full cup (200g). Or replace a full cup of sugar (200g) with 1/3 cup (66g) of monk fruit sweetener with erythritol.
2. You can swap out vegan butter for applesauce, a 1:1 ratio.
3. No oats? No problem. Use an additional 1 cup (125g) of regular or gluten-free all-purpose flour in place of quick oats.
