No Bake Peanut Butter Date Balls

Ingredients

  • 3/4 cup creamy peanut butter
  • 2 cups dates, pitted
  • 2 tablespoons maple syrup
  • 1 tablespoon vanilla extract
  • 2 tablespoons coconut oil
  • 1/2 cup cashews, unsalted
  • 1/2 cup flax seed
  • 1 teaspoon chia seeds
  • 1 cup quick oats

Instructions

  • In a food processor using the S blade, pulse together the dry ingredients: chia seeds, flax seeds, maca cereal, and cashews. Pulse together for about 20 seconds, just until the mixture is combined into grainy powder, not dust!
  • Add in your peanut butter and dates. Pulse again for 20 seconds, then add in the coconut oil, maple syrup, and vanilla extract. Pulse together again until mixture is well combined.
  • Roll the "dough" into 1 inch size balls and place on a baking sheet. Place them in the freezer for 20 minutes. Then remove them. Store them in an airtight container in the fridge.

Notes

*Note: If you do not have chia or flax seeds the recipe will still work. You can also substitute cashews for any nuts you may have on hand. As for the maple syrup, honey can be a substitute as well.
