Roasted Potatoes & Kale

Roasted Potatoes & Kale

These tasty potatoes make for the perfect side dish and uses plant-based butter!

Ingredients

  • 1.5 pounds small red potatoes cut into 1/2-inch pieces
  • 3 tablespoons Country Crock® Plant Butter with Olive Oil Stick melted and divided
  • 2 large cloves garlic minced
  • 8 ounces kale (about 1 small bunch) rinsed, stems and tough ribs removed, then rough chopped

Instructions

  • Preheat oven to 425°F. Arrange potatoes on baking sheet and drizzle with half the melted Country Crock® Plant Butter with Olive Oil, stir to coat.
  • Roast until potatoes are beginning to brown, about 15 minutes. Remove from oven, stir potatoes and sprinkle with garlic.
  • Toss kale with remaining Plant Butter until evenly coated. Arrange kale on top of potatoes. Return to oven and roast until kale is crisp and beginning to brown, about 10 minutes.

    Literally this is the absolute bet thing I have ever tasted I have never been a fan of kale but its soooo good. The kale was so crispy and flavorful, same with the potatoes. It doesn’t say to add any seasoning but I added rosemary and salt and pepper but I feel like it would be just as good without the seasoning. 15/10 would recommend this recipe. I am new to being vegan and I was sort of being on the fence about this life style because I was getting some vegan substitutions and they were nasty but I want to be vegan my whole life based off this recipe.
