The idea for Cocomels came to JJ Rademaekers in a dream back in 2009. “I dreamt that I was in a Willy Wonka–like lab,” says Rademaekers, “and when I woke up the next morning, I said, ‘wait a second, those were my candy ideas!’” The spark was lit.
As with many food entrepreneurs, Rademaekers experimented with recipes in his Boulder kitchen and shared samples with friends for feedback. His main ingredient was coconut milk. “My body doesn’t love dairy, and I love coconut milk. So I decided to try and make a delicious and naturally derived coconut milk caramel,” he says.
