Ingredients

  • 1/2 jar Barilla® Sun-dried Tomato Pesto
  • 4 hard boiled eggs, sliced thin
  • 1 avocado, sliced thin
  • 4 slices whole grain bread, toasted
  • 2 plum tomatoes, sliced thin
  • Salt and black pepper to taste

Instructions

  • Place bread on a plate. Spread 2 tablespoons pesto on top of 2 slices of bread.
  • Top with avocado, tomato, and egg. Season with salt and pepper.
  • Top each slice with the remaining bread and enjoy.
