Kefir Artichoke Dip

This artichoke dip features probiotics from kefir, adding to its nutritiousness.

Ingredients

  • 1 cup whole-milk kefir
  • 4 ounces cream cheese softened
  • 1 teaspoon capers
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Kosher salt to taste
  • Ground black pepper to taste
  • 3/4 cup Parmesan cheese
  • 1 cup canned artichoke hearts drained and chopped

Instructions

  • In a medium-sized bowl, combine kefir and cream cheese with a hand mixer or immersion blender, until smooth.
  • Mix in capers, lemon juice, mustard, salt and pepper, until well blended.
  • Fold in cheese and artichoke hearts. For a fun presentation, serve in a bread bowl.
