Add your favorite superfood to make this recipe even better! You can add ¼ teaspoon hemp seeds, ¼ teaspoon sesame seeds, or ¼ teaspoon sunflower seeds (per serving).

- 1 cup cooked quinoa
- 1 medium sweet potato
- 8 rice paper rounds
- 1 large Hass avocado
- 8 ounces lox
- 2 Persian cucumbers, julienned
- ½ bunch of cilantro
- 2 watermelon radishes, thinly sliced
Fill a large bowl with room temperature water. Working with one rice paper wrapper at a time, dip into the water so the entire wrapper is submerged. Once it is thoroughly soaked, remove from the water and lay it on your work surface (the rice paper wrapper will be fairly stiff, but it will continue to soften as you work).
Next, arrange some of the avocado slices in the center bottom of the wrapper. Then top with the lox, cucumber, sweet potato, cilantro, and radish. Fold each side of the wrapper to the center and tightly roll up from the bottom so it is secure. Serve and enjoy!
