Party It Up Salad
You can easily make this recipe dairy-free by omitting the feta, and nut-free by leaving out the nuts.

Ingredients

cooked quinoa

pre-cooked baby beets, chopped

spinach, chopped

fresh blueberries

red grapes, halved

low-fat feta cheese, crumbled

raw walnuts, chopped

cup
pomegranate arils
Pomegranate Lemon Dressing:
¼
cup
lemon juice

tablespoons
pomegranate molasses

tablespoons
olive oil

garlic clove, minced

teaspoon
salt
½
teaspoon
black pepper
Instructions
In a large bowl, mix all of the ingredients together except pomegranate arils.
In a lidded container mix all dressing ingredients and shake vigorously until combined. Add dressing to salad, coat thoroughly, and top with pomegranate arils and serve.
