Course: smoothie
Keyword: avocado, ayurveda cooking, coconut water, ginger, hemp seeds, sattvic, smoothie bowl, vegetarian
Servings: 2
Author: From The Everyday Ayurveda Cooking for a Calm Clear Mind by Kate O'Donnell. Reprinted by arrangement with Shambhala Publications

Ingredients

  • 1 cup blueberries
  • 2 tablespoons hemp seeds
  • ¼ avocado
  • 2 kale leaves
  • cups coconut water or plain water
  • ½ teaspoon ground ginger
  • 1 teaspoon raw honey (optional)

Instructions

  • Place the ingredients in a blender in the order listed. Begin to pulse on low so the honey, if using, does not fly upward. Blend on high for 1 minute.
  • Pour into 2 glasses and serve immediately.

Notes

The Avocado Question
Avocados are earthy, heavy, and oily, which can lend them both rajasic and tamasic qualities. At the same time, their naturally occurring vegetable fat nourishes the body and can replace dairy for those who do not digest it well. In this recipe, I’ve paired a small amount of avocado, just enough to add some grounding and creamy texture, with the light qualities of berries and kale. I don’t recommend relying on this for breakfast every day, but I do want to demonstrate a dairy-free smoothie option that won’t freeze your gut.
