Roasted Strawberry Balsamic Paloma

A simple and refreshing cocktail perfect for Mother's Day brunch.

Ingredients

  • 2 ounces Roasted Strawberry Simple Syrup (recipe below)
  • 2 ounces Natalie's Grapefruit Juice
  • 1 1/2 ounces silver tequila
  • 1/2 ounce fresh lime juice
  • 1/2 ounce white balsamic vinegar
  • Club soda
  • Grapefruit wedge, for garnishing

Roasted Strawberry Simple Syrup:

  • 1 1/5 cups strawberries, hulled and sliced
  • 1 tablespoon sugar
  • 1 cup water
  • 1 cup sugar

Instructions

Cocktail:

  • In a cocktail shaker, combine roasted strawberry simple syrup, grapefruit juice, tequila, lime juice and white balsamic vinegar.
  • Add ice.
  • Shake well.
  • Strain into an ice-filled glass.
  • Top with club soda.
  • Garnish with a slice of lime.

Roasted Strawberry Simple Syrup:

  • Preheat oven to 350 degrees.
  • Toss sliced strawberries with 1 tablespoon sugar, then spread them on a parchment paper- lined baking sheet.
  • Roast strawberries for 10-15 minutes, until they are bubbly and beginning to darken.
  • In a small saucepan, combine water and sugar. Bring to a boil, then stir to dissolve the sugar.
  • Reduce to a simmer.
  • Add roasted strawberries and their juice to the water and sugar mixture.
  • Remove pan from heat and let strawberries steep for 30 minutes.
  • Strain through a fine mesh strainer.
  • Refrigerate until well chilled.
