These brownies are low in calories and high in yummy cocoa flavor.

Ingredients

  • 1/2 cup (1 stick) unsalted butter, cut into 1-inch pieces
  • 2 1/2 tablespoons SweetLeaf Stevia Sweetener
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/3 cup all-purpose flour

Instructions

  1. Preheat oven to 325˚. Line an 8×8-inch glass baking dish with foil, leaving a 2-inch overhang. Coat foil with nonstick spray.
  2. Melt butter in a small saucepan over medium heat. Let cool slightly. Whisk stevia, cocoa and salt in a medium bowl to combine. Pour butter in a steady stream into dry ingredients, whisking constantly to blend. Whisk in vanilla. Add eggs one at a time, beating vigorously to blend after each addition. Add flour, and stir until just combined (do not over-mix). Scrape batter into prepared pan; smooth top.
  3. Bake until top begins to crack and a toothpick inserted into the center comes out with a few moist crumbs attached, about 25–30 minutes.
  4. Transfer pan to a wire rack; let cool completely in pan. Using foil overhang, lift brownie out of pan; transfer to a cutting board. Cut into 16 squares.

    Do NOT make this! I followed the recipe perfectly and all I got a black mass of buttered cocoa rubber in a baking dish. Something is WAAAAAY off with this recipe!

    HORRIBLE. Tastes like dirt. I don’t know why this says serves 16. Maybe they mean 16 mice. Was this posted on April fools day? I feel bamboozled.

    I spent time and money on these brownies, and they are terrible. I followed the instructions exactly. After a taste, they are all going over the deck to the critters. They were not sweet enough, and there was barely enough batter to fill the 8×8 pan, which I lined with foil, just like the directions said. I’d like to say SOMETHING good, but I cannot. This recipe is going in the trash.

    Terrible recipe. I followed every single thing to the letter and the brownie mix was like peanut butter. I never rose in the oven and I was so disappointed. I believe it definitely needed baking powder and oil as it was truly lacking anything that even resembled eatable brownies.

    Sorry, I hate to post a bad review…but these were horrible. I tasted one bite and they went straight in the trash. They were just inedible…disgusting. I wasn’t expecting them to taste great but they were just awful.

    I feel like there must be a missing ingredient like baking soda or baking powder. I made this recipe exactly as it is printed and I got flat, greasy brownies.
