Balsamic Beet Kefir Dip

A healthy, colorful addition to your next dinner party or for weekday snacking.

Ingredients

  • 3 large beets peeled and diced (about 4 cups)
  • Olive Oil for baking beets
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 cup whole-milk kefir
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon fresh thyme leaves

Instructions

  • Preheat oven to 400°. Place chopped beets onto a large sheet pan, drizzle with olive oil, and season with salt and pepper. Toss to coat, and bake 40–45 minutes, flipping once. Let cool 5–10 minutes.
  • Place beets and remaining ingredients in a food processor, and blend until combined. Season with more salt and pepper, to taste.
